Brownies With Red Currant

Ingredients:
200 g coconut sugar
150 g wheat flour
5 eggs
4 tablespoons of carob powder
10 g baking powder
1 vanilla essence
a sprinkle of salt
red currant for decorating
Chocolate ganache:
300 g chocolate
100 g liquid cream
1. Mix all solid ingredients.
2. Beat the eggs, add the vanilla essence and incorporate the solid ingredients by using a spatula.
3. Preheat the over at 175 degrees Celcius and bake for 25-30 minutes.
4. Transfer the brownie to a wire rack to cool.
5. Place a bowl above boiling water to prepare the chocolate ganache. Mix the chocolate with the liquid cream
until the topping is ready.
6. Cover the brownie from the wire rack with the chocholate topping.
7. Decorate with red currant.
