Sponge cake

Sponge cake with no raising agents


Ingredients:

2 cups of wheat flour

• 2 cups of sugar

• 4 tablespoons of carob powder

• 7 eggs at room temperature

• 7 tablespoons of water

• 7 tablespoons of sunflower seeds oil

• vanilla essence

• a pinch of salt

Put the sugar and water in a pot at low heat until the sugar melts completely. Separate the egg whites and

the yolks. Start mixing the egg whites with a pinch of salt, until they double their volume and they are smooth. Gradually pour the melted hot sugar in a continuous flow into the egg whites cream, stirring vigourously. Add the egg yolks, vanilla essence and the 7 tablespoons of oil into this mixture. Put apart one third of this mixture and incorporate the carob powder

into it. Add the flour gradually to the remaining mixture.

Prepare a rectangular tray with baking sheet to bake the cake.

Add the white cream and the black cream on top and make swirls.





You can also spread the batter alternating the white cream and the brown cream in order to obtain a marmorated cake.




Bake the cake for 40 min at 170 degrees Celsius.

Place the cake on a wire rack and allow it to cool.
