Molehill Cake

Ingredients

• 150g wheat flour

• 180 g brown sugar

• 5 eggs

• 4 tablespoons of cocoa

• 40 ml sunflower seed oil

• a sprinkle of salt

Cream

• 250 g mascarpone cheese

• 250 ml sweetened whipping cream

• 100 g grated milk chocolate

• vanilla essence

• 3 bannas


  1. Mix the eggs with the sugar and salt in a big bowl, until they double in volume.


  1. Add the cocoa and mix well.

  2. Add the sunflower seed oil.



  1. Sieve the wheat flour and gradually add it and mix it with a spatula.




  1. Transfer the mixture to a cooking pot and bake for 40 minutes in a preheated oven at 180 degrees Celsius.

  1. Allow the cake to cool on a wire rack before starting to scoop it.

  2. When it is perfectfly cooled you can start to scoop the cake. Put a smaller plate and start cutting around the plate. Scoop the cake and put it in another bowl in order to make crumbles.

  1. Mix the mascarpone with the whipping cream with a mixer and then add the grated chocolate and vanilla essence.

  1. Cut the bannas in slices and arrange a layer with bannas at the bottom of the cake. Add a layer with crean an then another layer with bannas. Use the remaining cream to mame a dome. Cover the dome in crumbles.


  1. Allow the cake to rest over night in the fridge before you can serve it.
